Lego Escher
Probably the most time consuming geek hobby ever, Andrew Lipson makes lego models. Of everything.
My personal favourite (and probably everybody elses personal favourite judging by Digg and Del.icio.us) is Eschers “Relativity” - completed in lego, with little lego men. The attention to detail is amazing, just check out the description for detailed breakdown and step by step images - it took 3 months!
Also worth a mention are the various strips, surfaces and saddle points made for the mathematical sculptures page - obviously also all made from lego.
